Nothing beets a root

400G ORGANIC beans
400g beetroot
1 organic red onion
300g organic (or best quality ) Feta
80ml extra virgin organic olive oil
1 tbsp lemon juice
1 tbsp balsamic vinegar

Blanch beans in boiling water for 2 mins. Steam chopped beetroot till tender (around 20 mins). Transfer to a bowl. Add 1 halved and sliced medium red onion and crumbled feta.
In a small bowl, combine 80ml olive oil and 1 tablespoon fresh lemon juice. Season with salt and pepper. Pour over salad, mix, then serve.

BEETROOT, BEAN AND FETA SALAD

Beetroot and Orange Salad



6-8 organic beetroot, peeled, cut into wedges
1 tablespoon raw organic honey
2 tablespoons balsamic vinegar
2 tablespoons extra virgin cold pressed organic olive oil
½ organic red onion, thinly sliced
2 organic oranges, peeled, segmented
2 tablespoons fresh organic mint leaves




Preheat oven to 220°C (200°C fan). Cover a baking tray with a piece of foil double the size of tray. Place beetroot on tray in a single layer. Combine honey, half balsamic vinegar and 1 teaspoon oil in a bowl and stir to combine. Drizzle honey mixture over beetroot and season with salt and freshly ground black pepper to taste. Enclose beetroot in foil and cook for 45mins. Open parcel and cook a further 15mins.


2 Meanwhile, make dressing. Place remaining oil and balsamic vinegar in a small jug and whisk to combine. Arrange cooked beetroot, orange segments and onion on a plate. Drizzle with dressing and garnish with mint. Serves 4.

Beet packs a punch


Researchers at the University of Exter have found that drinking Beetroot juice increases oxygen supply to the muscles.

Researcher Andy Jones says: 'We were amazed by the effects of beetroot juice on oxygen uptake, because these effects cannot be achieved by any other known means, including training..... Stunned by the results, these results indicate some of the benefits of a daily dose of beetroot juice, even surpasses those gained from strict training routines professional sportsmen follow.'
